Mothers Day Brunch Recipes


Festivities and food go together. In fact, these are the occasions when we all break our promises of a disciplined and healthy eating and look forward to mouth watering and delicious delicacies.

Even if she is hungry, Moms have always been happy to give us more than our share just to see that smile on our face. It's pay back time on Mothers Day.

Here are few names of the dishes and drinks we have provided recepies for the occassion of the Mother's Day.

Chicken Parmesan Recipe
 
8 oz Progresso Italian Bread Crumbs
1/2 cup Kraft Dry Parmesan Cheese
3 Eggs
Water as per requirement
Garlic Powder to taste
12 Chicken Breasts

In a bowl mix bread crumbs, parmesan cheese and set aside.
Beat the eggs with fork until smooth and set aside.
Clean the chicken breasts.
Dip chicken breasts in the egg mixture until covered.
Dip chicken into bread crumb mixture till evenly covered
Roll and shape into tight little ball like pieces, hold till it sets up firm and stuff tightly together in a baking dish so that all sides of chicken are touching each other.
Drizzle melted butter over the top.
Sprinkle some parsley flakes.
Cook at 375 degrees in oven till done for 1 hour.


Apple Cinnamon Pancake Mothers Recipe

 2 cups biscuit mix
1 scant teaspoon ground cinnamon
1 egg
1 1/3 cups milk
3/4 cup grated apples, about 2 medium apples

1 cup sugar
2 tablespoons cornstarch
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups apple cider
2 tablespoons lemon juice
3 tablespoons butter

Combine biscuit mix, cinnamon, egg and milk; beat until smooth. Stir in grated apples.
Grease large skillet or griddle and heat over medium heat. Pour batter, about 1/4 cup for each pancake, onto hot griddle.
Bake until bubbles appear around the edges, turn and bake other side until golden brown.
Serve with warm cider syrup. Your apple sauce topping pancakes are ready
Sauce: In saucepan, combine sugar, cornstarch, cinnamon and nutmeg; stir in apple cider and lemon juice.
Cook over medium heat, stirring constantly, until mixture thickens and begins to boil. Continue to boil, stirring, for 1 minute.
Remove from heat and stir in butter. Makes about 2 1/2 cups of syrup.


Key Lemon Pie Recipe
Mothers Day Recipes

1/3 c: Lime juice
Zest of 6 Key Limes
14 oz: Sweetened condensed milk
3 ea: Egg yolks, beaten
1 x 9-inch: Graham craker crust
1/2 pt: Whipped cream
2 T: Confectioner's sugar
1 1/2 ts: Rum
Green food coloring (4-6 drops)
1 T: Rum

Add lime juice and zest to condensed milk. Beat in egg yolks. Add rum and food coloring to it, if desired.
Pour into pie shell.
Whip cream together with 2 T confectioner's sugar and 1 T rum. Now, spread whipped cream evenly over pie.
Chill until set (for about 4 hours).
